Here is a dessert to consider making for Preparation Day if your family enjoys chocolate-flavored cakes. This one surprisingly tastes marvelously delicious with no eggs and no butter! The frosting does require vegan butter. If you have never tried vegan butter, it is easy to find in most grocery stores, but you only need that if you want to create the frosting prescribed in the recipe. The recipe also calls for “granulated sugar,” which you can substitute with maple syrup or honey powder to make it even healthier. It also calls for flour, and you can use gluten-free flour. Coconut flour may also be possible to use but you may have to experiment with adjusting how much to add since the results will no be the same.
The entire recipe can be made in one bowl, even the frosting. You will need two 9-inch cake pans, or you can probably turn this into a bundt cake by pouring the entire batter into a bundt cake pan and maybe forgo the frosting if you desired.
